Don't overthink it.

Brewing tea is either the simplest thing in the world, a time honored ceremony, or a process detailed out in official government specifications, depending on who you ask. (Great Britain literally has an official standard!)

We think tea should be brewed the way you like it. Not by a rulebook. By you.

You need three things:

A mug (two, ideally)
A kettle or a pot
A strainer, infuser, or fine-mesh sieve

That's it. No ceremony required — unless you want one, in which case the ceremony is making it for someone else.

Three things that matter

1. Measure your leaf.

General rule: 1 teaspoon per 8 oz cup. But every blend is different. Fluffier blends like Bliss might want a full tablespoon. Denser teas like Tahoe Blue might want less. Check the back of the bag — our suggested servings are there.

2. Heat your water.

Different teas like different temperatures:

Black

Full rolling boil (203°F)

Green tea

180°F

Yerba Mate & Rooibos

208°F

Herbal infusions

208°F

No thermometer? Watch the pot: bubbles forming on the bottom = ~180°F · first bubbles rising = ~195°F · full rolling boil = 212°F. Use fresh, cold water. Don't reuse water that's been sitting overnight — it tastes flat.

3. Steep it right.

Pour the water over the tea. Make sure the leaves are fully covered. Then time it:

Black

4 minutes

Green

3–5 minutes

Yerba Mate

5–6 minutes

Rooibos

5–6 minutes

Herbal

4–5 minutes

When time's up, pull the infuser. Don't over-steep to make it stronger — that just pulls out bitterness. If you want a stronger cup, use more leaves, not more time.

The second steep (and the third)

Here's something most people don't know: loose-leaf tea isn't one-and-done. Most of our blends can be re-steeped two or three times. Just add about 30 seconds to the steep time each round.

That means one measure of leaves gives you multiple cups. More tea for your money. And more importantly — more time to just hang out.
